If you are comfortable with your mana regeneration, you should eat food that gives you Intellect. You will be granted:

If you are comfortable with your mana regeneration, your flask should be a Flask of the Warm Sun Icon Flask of the Warm Sun.

If you are not comfortable with your mana regeneration, your flask should be a Flask of Falling Leaves Icon Flask of Falling Leaves.

3.3. Potion

During the encounter, your best choice for a potion will be Master Mana Potion Icon Master Mana Potion, which instant grants you 30,000 mana, or Potion of Focus Icon Potion of Focus, which grants you 45,000 mana over 10 seconds (provided you do not need to perform any action during this time).

4. Summing-up Profession Perks↑top

Choosing a profession for your Holy Paladin can impact your raid performance. As a rule, you should shy away from gathering professions (with the exception of Herbalism), which leaves the following viable professions for raiding:

Blacksmithing Provides a 640 Spirit gain through two extra sockets, Socket Bracer Icon Socket Bracer and Socket Gloves Icon Socket Gloves, in which you can fit 2 Sparkling River's Heart Icon Sparkling River's Heart.
Jewelcrafting Provides a 320 Spirit gain through the ability of using 2 Sparkling Serpent's Eye Icon Sparkling Serpent's Eye.
Alchemy Provides an 320 Spirit or Intellect (depending on your choice) gain to your flask through Mixology Icon Mixology.
Enchanting Provides a 320 Intellect gain through Enchant Ring - Greater Intellect Icon Enchant Ring - Greater Intellect.
Engineering Provides +1,920 Intellect for 10 seconds every minute through Synapse Springs Icon Synapse Springs (the overall gain is +320 Intellect). Engineering also provides a belt addon called Frag Belt Icon Frag Belt, which you can use every minute (off the global cooldown) for additional damage.
Inscription Provides a 320 Intellect gain through Secret Crane Wing Inscription Icon Secret Crane Wing Inscription.
Leatherworking Provides a 320 Intellect gain through Fur Lining - Intellect Icon Fur Lining - Intellect.
Herbalism Provides a 480 Haste Rating gain in average through Lifeblood Icon Lifeblood.

Blacksmithing is the best profession for Holy Paladins, since it provides a higher secondary stat increase than any other profession.
