Overview
In Wrath of the Lich King, consumable and enchant requirements for Fire Mage has been eased in comparison to TBC (no more Weapon oil and Drink), so every Mage will be expected to bring them. Below you will find a list of required consumables and enchants for playing a Fire Mage in PvE.

The gem choices in Wrath of the Lich King are really clear, and you can find them in the table below:

Consumables for Fire Mage
Use Fish Feast, Tender Shoveltusk Steak, or Firecracker Salmon. They provide you with 46 Spell damage and 40 Stamina for 1 hour. If you lack a lot of Hit, Snapper Extreme provides you with 40 Hit Rating and Stamina, but this is usually worse than using gems to reach your Hit cap.
Flask of the Frost Wyrm is the most powerful Alchemy consumable available. The alternatives are all worse; do not bother with them.
Potion of Speed, Potion of Wild Magic, Runic Mana Injector (with Engineering you gain bonus Mana), and Runic Mana Potion are the potions of choice. However, Potion of Speed is the strongest option, unless your casts go below global cooldown (1 second) cast time. In that case, you want to use Potion of Wild Magic. A feature of WotLK is that potions only have a 1-minute cooldown. However, that feature quickly gets negated by the fact that you can only use one potion per fight. The solution to this is to pre-pot Potion of Speed or Potion of Wild Magic 1 second before the boss fight starts (look at your boss mod timer). As you took the potion out of combat, it only induces the 1-minute cooldown, but then you may use another potion during combat. Using Mana potions in and between trash pulls is a valid option.
Mana Sapphire, Scroll of Spirit VIII (if no Priest with Divine Spirit is around), and Heavy Frostweave Bandage belong to your standard consumable repertoire.
Flame Cap increases Fire Damage by up to 80 for 1 minute. It has a 3-minute cooldown which is not shared with Mana Gems, so you can use both a Mana Gem and this. If possible, this should be timed either with raid cooldowns like Bloodlust/Heroism or with the execute phase (Molten Fury).
Three rather niche consumables that do not hurt to use are Greater Rune of Warding and Dark Runes/ Demonic Runes. The Rune of Warding gives you a chance to absorb a little bit of Physical damage (useful when taking cleave damage) and the Dark/Demonic Runes restore a tiny amount of Mana. Using either of them induces a 15-minute cooldown on itself and a 2-minute cooldown on the other. In other words, if you use a Dark Rune it will get a 15-minute cooldown and you will have to wait 2 minutes before you can use a Demonic Rune, and vice-versa. Using the latter two consumables will not cost you a lot and can help you to overcome the time until your next Evocation or Mana Gem is ready.
As Engineering is the best profession for any DPS, you should have it. This is because of the strong enchants and utility Engineering provides and because of your main damage-providing consumables, Global Thermal Sapper Charge and Saronite Bomb. Make sure to make a Saronite Bomb macro like this:

This will throw the Saronite Bomb at your cursor position and then cast Fireball on your target. Another option would be to change [@cursor] into [@player] and Fireball into Arcane Explosion, so the macro will throw the Saronite Bomb at your position when you are in melee range for casting Arcane Explosion. The condition [@cursor] will throw the bomb at your cursor position. You can be very creative with these kinds of macros.
